I went to dim sum in Houston this past weekend, and we actually did order the "bowl of guts." I've been to dim sum many times before, and I don't think I ever saw that particular dish before. I didn't try any, but I kind of regret it now. Even my mom, who does eat intestines, stomachs, etc., didn't have the large black pieces. She told me it was cow lung; i guess it is not.

you forgot to mention that at empress pavilion they take particular pleasure in making it the biggest, heaving bowl of guts they possibly can--it's a regular soup bowl but they add at least twice the amount, using the tripe to shape up the sides. and then when it has reached it's absolute limit, they shove in some more. it's an awesome sight.

Hey TP, the complete "bowl of guts" comprises of two kinds of tripe, pancreas and intestines. I'm not sure why those particular parts are chosen. Maybe it's traditional. I'll have to find out next time.

Santos, nice to hear from you again. Yeah, I tried to get a photo of the lady prepping the "bowl of guts" but she was moving too fast and my digi cam is too slow. Time to upgrade my camera.
